Ingredients

  • 12 large jalapenos
  • 4 oz cream cheese, softened
  • 4 oz sharp cheddar cheese, shredded
  • 4 oz Monterey Jack cheese, shredded
  • 1 cup cooked ground turkey or chicken (optional)
  • 1/2 cup crumbled bacon
  • 1/4 cup finely chopped green onions
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper, to taste
  • Cooking spray

Instructions

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper or aluminum foil.
  2. Carefully slice jalapenos in half lengthwise and remove seeds and membranes. Using a spoon, gently scoop out the inside of each pepper half to create a hollow space. Set aside.
  3. In a large bowl, mix together softened cream cheese, shredded cheeses, ground turkey or chicken (if using), crumbled bacon, green onions, garlic powder, smoked paprika, cayenne pepper, salt, and pepper until well combined.
  4. Spoon the mixture into each jalapeno half, filling them generously. Place filled jalapenos on the prepared baking sheet.
  5. Spray the top of each jalapeno with cooking spray to help them brown.
  6. Bake for 20 25 minutes or until the cheese is melted and bubbly, and the jalapenos have softened. Let cool slightly before serving.
