  • 1 lime, cut into wedges
  • 1/2 cup Mexican crema or sour cream
  • 1/2 cup queso fresco, crumbled

Instructions

  1. In a medium bowl, combine the pork with the achiote paste, cumin, ancho chili powder, smoked paprika, ground coriander, ground cinnamon, salt, and pepper. Mix well to coat the pork evenly. Marinate for at least 30 minutes or up to overnight in the refrigerator.
  2. Preheat your grill or griddle pan over medium high heat. Grill the marinated pork for about 4 minutes per side, until cooked through and slightly charred. Remove from the grill and let it rest for a few minutes before thinly slicing.
  3. Thread the pineapple chunks onto skewers and grill them for 2 3 minutes per side, until lightly charred and softened. Remove from the grill and set aside.
