Ingredients

  • 1 cup Jasmine rice (preferably pre
  • cooked) 3 tbsp vegetable oil 4 cloves garlic, minced Salt and pepper, to taste 2 large eggs 6 oz Tocino (Filipino cured pork), sliced into strips Freshly chopped scallions for garnish

Instructions

  1. In a non stick pan, heat the oil over medium heat and add garlic. Sauté until golden brown.
  2. Add pre cooked rice to the pan, stirring well to combine with the garlic oil. Season with salt and pepper to taste.
  3. Cook the rice, stirring occasionally, for 4 5 minutes or until lightly crisped and heated through.
  4. In a separate non stick pan, cook Tocino slices over medium heat for 2 3 minutes per side or until golden brown and crispy.
  5. In another non stick pan, fry the eggs to your preference (sunny side up).
  6. Arrange rice on a plate, top with Tocsin, and place the fried egg next to it. Garnish with scallions and serve.
