  • 1 lb beef sirloin, thinly sliced
  • 2 bell peppers, thinly sliced
  • 1 medium onion, thinly sliced
  • 8 small flour tortillas
  • 4 oz cream cheese, softened
  • 3 tbsp taco seasoning
  • 2 tbsp honey
  • 2 tbsp sriracha sauce
  • 1 cup shredded cheddar cheese
  • 1 jalapeno, thinly sliced (optional)
  • Fresh cilantro leaves, for garnish

Instructions

  1. In a large skillet, heat oil over medium high heat. Add bell peppers and onions cook until tender, about 5 minutes. Remove from pan and set aside.
  2. In the same skillet, cook the seasoned beef slices until browned. Stir in honey and sriracha sauce simmer for 2 3 minutes or until slightly thickened. Set aside.
  3. Spread a thin layer of cream cheese onto each tortilla. Arrange bell peppers, onions, beef mixture, and cheddar cheese over the cream cheese layer. Add jalapeno slices if desired.
  4. Roll up each tortilla tightly, starting from the bottom edge. Secure with toothpicks if needed. Cut into bite sized pieces.
  5. Place bite sized fajita rolls onto a preheated grill or grill pan over medium heat. Cook for 2 3 minutes per side until slightly charred and heated through. Garnish with fresh cilantro leaves before serving.
