Instructions

  1. In a large bowl, combine sliced beef with half of the Fireball Fajita Seasoning and toss well. Let it marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  2. Heat a large grill pan or cast iron skillet over high heat. Once hot, add the marinated beef and cook until browned and slightly charred, about 4 5 minutes per side. Transfer the cooked beef to a plate and tent with foil to keep warm.
  3. In the same pan, add sliced onion and bell peppers along with the remaining Fireball Fajita Seasoning. Cook for 4 5 minutes until veggies are slightly charred and tender.
  4. To assemble the fajitas, layer rice, grilled beef, sautéed veggies, and a dollop of sour cream in each tortilla. Garnish with fresh cilantro leaves and serve with lime wedges on the side.
