In another pan, melt the cream cheese in a double boiler or microwave, stirring occasionally until smooth.
Once the beef is cooked and seasoned, fold in the shredded cheddar cheese until melted and well combined.
Assemble the pie by layering Frito corn chips on a large platter, topping with a layer of beef mixture, a drizzle of cream cheese, more chips, and repeating until all ingredients are used.
Garnish with sautéed jalapeños, pickled jalapeño slices, green onions, and cilantro leaves. If desired, add a final drizzle of Fireball sauce for an extra kick.

The fireball sauce adds an extra layer of heat and flavor to this dish, but can be omitted or replaced with your favorite hot sauce if preferred.
