Ingredients

  • 6 ears of corn, shucked and cleaned
  • 1/2 cup mayonnaise
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 1 teaspoon butter

Instructions

  1. Heat a grill or grill pan over medium high heat. In a small bowl, combine the mayonnaise, chili powder, smoked paprika, cumin, salt, and pepper. Mix well. Set aside.
  2. Brush the corn with butter and season with a pinch of salt. Grill the corn for 10 12 minutes, turning occasionally, until slightly charred on all sides. Remove from heat and let cool slightly.
  3. Slather each ear of corn with the spiced mayonnaise mixture, then sprinkle with crumbled cotija cheese. Finish with a dash of cilantro and a squeeze of lime juice. Serve immediately.
