Firecracker BBQ Smokehouse Burger with Sweet Onion Rings

2 large beef patties (80% lean, 20% fat) 4 slices of Monterey Jack cheese 1 large onion, thinly sliced into rings 1 cup all
purpose flour 1 cup buttermilk 1 cup panko breadcrumbs 1 tbsp Cajun seasoning Vegetable oil for frying
Instructions
Preheat the grill to medium high heat.
Season the beef patties with your favorite BBQ rub or spice mix.
In a shallow dish, combine flour and Cajun seasoning. In another dish, whisk together buttermilk and panko breadcrumbs.
Dredge onion rings in the flour mixture, then coat in buttermilk and breadcrumb mixture. Set aside.
Grill patties for 3 4 minutes per side or until desired doneness. In the last minute of cooking, top each patty with a slice of cheese. Remove from grill and set aside.
Fry onion rings in hot oil (375°F) for 2 3 minutes or until golden brown. Drain on paper towels.

To create a smoky aroma, soak wood chips in water for 30 minutes before placing them on the grill.
