Instructions

  1. In a small bowl, combine the melted butter, chili powder, smoked paprika, garlic powder, onion powder, ground cumin, ground black pepper, ground coriander, ground cinnamon, and lime zest. Mix well.
  2. Brush the corn with half of the prepared butter mixture, making sure to spread it evenly from top to bottom.
  3. Preheat your grill or grill pan to medium high heat. Grill the corn for 5 7 minutes per side, or until it is golden brown and tender. Rotate the corn occasionally to ensure even cooking.
  4. While the corn is grilling, prepare the lime crema by combining the mayonnaise, sour cream, juice of 1 lime, chopped cilantro, chili powder, and salt in a small bowl. Mix well and set aside.
  5. Remove the corn from the grill and immediately brush with the remaining butter mixture. Let it rest for a minute to absorb the flavors.
