Instructions

  1. In a small bowl, mix together all the ingredients for the Firecracker Seasoning. Set aside.
  2. Slice chicken into thin strips and toss with 3 4 tbsp of the seasoning mix, ensuring an even coating.
  3. Heat a large skillet or griddle over medium high heat. Add chicken and cook until browned and cooked through, about 6 7 minutes. Remove from pan and set aside.
  4. In the same pan, add sliced onions and bell peppers. Cook until tender, about 5 minutes.
  5. Add the remaining seasoning mix to the vegetables and stir well to coat. Cook for an additional 2 3 minutes.
  6. Return chicken to the pan, tossing everything together with the seasoned vegetables.
  7. To assemble sliders, place a portion of the chicken mixture on each toasted bun bottom, top with grated Monterey Jack cheese, and then add the bun tops.
  8. Place the slider stacks on a preheated griddle or skillet over medium heat for 2 3 minutes until the cheese is melted and bubbly.
  9. Serve immediately with guacamole, sour cream, and hot sauce as desired.
