Ingredients

  • 1 lb large shrimp, peeled and deveined 1 cup all
  • purpose flour 1/2 tsp salt 1/4 tsp black pepper 1/2 cup buttermilk 2 cups panko breadcrumbs 3 cups vegetable oil, for frying

Instructions

  1. In a shallow dish, mix together the flour, salt, and black pepper.
  2. In another shallow dish, pour the buttermilk.
  3. Pour the panko breadcrumbs into a third shallow dish.
  4. Dredge each shrimp in the seasoned flour, then dip in buttermilk, and coat with panko breadcrumbs.
  5. Heat vegetable oil to 350°F (175°C) in a deep frying pan or deep fryer.
  6. Fry shrimp in batches for 2 3 minutes, until golden brown and cooked through. Remove with a slotted spoon and place on paper towels to drain excess oil.

Chef’s Insight

Don't overcrowd the pan when frying; this will lower the oil temperature and result in soggy shrimp.

Notes

Serve hot with a cold beer or your favorite refreshing beverage.
