In a shallow dish, whisk together the buttermilk and eggs.
In another shallow dish, combine flour, panko breadcrumbs, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.
Dip each chicken tender in buttermilk mixture, then dredge in the seasoned flour mixture to coat completely.
Heat about 2 inches of canola oil in a deep frying pan or Dutch oven until it reaches 350°F (175°C). Carefully lower each coated chicken tender into the hot oil and fry for 3 4 minutes per side, or until golden brown and cooked through.
