Ingredients

  • 3 lbs chicken wings (24 count)
  • 1/2 cup hot sauce (preferably Frank's RedHot)
  • 1/2 cup unsalted butter
  • 1 tbsp white vinegar
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1/4 tsp smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat your grill to medium high heat (about 375°F).
  2. In a medium bowl, combine the hot sauce, butter, vinegar, Worcestershire sauce, garlic powder, onion powder, cayenne pepper, and smoked paprika. Mix well.
  3. Pat dry the chicken wings with paper towels and season with salt and pepper.
  4. Grill the wings for 20 25 minutes, turning every 5 minutes, until they are cooked through and slightly charred.
  5. During the last 5 minutes of cooking, brush the wings with the sauce mixture, ensuring an even coating. You can reserve some sauce to serve on the side.
  6. Once done, remove from the grill and let them rest for a few minutes before serving.

Chef’s Insight

The secret to tender wings is patting them dry before grilling, which allows the skin to crisp up perfectly.

Notes

Adjust the cayenne pepper to your preferred spice level.
