Ingredients
- 24 large shrimp, peeled and deveined 1 cup all
- purpose flour 2 cups panko breadcrumbs 2 large eggs Vegetable oil, for frying Wood chips (hickory or mesquite)
Instructions
- Soak wood chips in water for at least 30 minutes.
- Preheat grill to medium high heat and preheat frying oil to 350°F.
- Set up a dredging station with flour, eggs, and panko breadcrumbs.
- Dredge shrimp in flour, then egg, and finally panko breadcrumbs.
- Thread shrimp onto metal skewers, leaving space between each piece.
- Grill shrimp for 2 minutes per side or until cooked through.
- Fry skewers for 2 minutes or until golden brown.
- Serve with Spicy Mango Dipping Sauce.
Chef’s Insight
Use wooden skewers soaked in water for at least 1 hour before grilling.
Notes
Serve with napkins, as the Spicy Mango Dipping Sauce may be messy.
