  • 3 tablespoons unsalted butter, melted
  • 1/2 cup mayonnaise
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/2 cup grated Cotija cheese or Parmesan cheese
  • 1/2 cup crumbled tortilla chips
  • 1/4 cup fresh cilantro leaves, finely chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat an outdoor grill to medium high heat or use a stovetop grill pan. Brush the corn with melted butter and season with salt and pepper.
  2. Grill the corn for 8 10 minutes, turning occasionally until lightly charred. Remove from heat and let cool slightly.
  3. In a small bowl, whisk together mayonnaise, paprika, cumin, garlic powder, onion powder, and a pinch of salt and pepper to taste.
  4. Brush the spiced mayonnaise mixture over each ear of corn, then sprinkle generously with Cotija or Parmesan cheese and crumbled tortilla chips.
  5. Return the corn to the grill for 2 minutes until the cheese is melted and slightly bubbling. Remove from heat and let cool slightly.
  6. Top the corn with chopped cilantro leaves and serve immediately with lime wedges on the side.
