  • 6 fresh ears of corn, shucked and silks removed
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup mayonnaise
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup crumbled blue cheese
  • 1/2 cup finely chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat a grill or grill pan to medium high heat.
  2. In a small bowl, mix together the melted butter, mayonnaise, smoked paprika, chili powder, garlic powder, onion powder, salt, and pepper to create the spicy sauce. Set aside.
  3. Brush the corn with some of the spicy sauce and place them directly on the grill or grill pan. Grill the corn for 10 12 minutes, turning occasionally, until slightly charred and tender.
  4. Remove the corn from the grill and brush generously with the remaining spicy sauce. Top each ear of corn with crumbled blue cheese and chopped cilantro.
  5. Serve immediately with lime wedges for a zesty kick.
