Ingredients

  • 2 whole corn cobs, shucked and cleaned
  • 3 tbsp mayonnaise
  • 1/4 cup finely crumbled feta cheese
  • 1/4 tsp smoked paprika
  • 1/4 tsp ground cayenne pepper
  • Salt and black pepper to taste
  • 2 tbsp freshly chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat an outdoor grill to medium heat or use a stovetop grill pan.
  2. In a small bowl, mix mayonnaise, feta cheese, smoked paprika, cayenne pepper, salt, and black pepper until well combined. Set aside.
  3. Place corn cobs on the preheated grill or grill pan and cook for 10 12 minutes, turning every 2 3 minutes to evenly char all sides of the corn. Remove from heat.
  4. Immediately brush each cob with the prepared sauce, making sure it's generously coated. Sprinkle fresh cilantro over the sauce.
  5. Cut each corn cob into three or four pieces and serve immediately with lime wedges for squeezing on top.
