Instructions

  1. In a small bowl, combine chili powder, smoked paprika, ground cumin, dried oregano, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Set aside.
  2. Slice the beef skirt steak into thin strips, then season generously with the spice mix, massaging it into the meat. Let it marinate for 30 minutes to overnight.
  3. Preheat a grill or grill pan over medium high heat. Grill the marinated steak strips until cooked to your desired doneness, about 2 4 minutes per side. Remove from heat and let rest for a few minutes.
