  • 5 cups all
  • purpose flour, plus more for dusting (600g)
  • 2 tbsp olive oil (30ml)
  • 1 tbsp salt (12g)
  • 1/4 cup sesame seeds (30g)
  • For the Herbed Labneh Dip:
  • 1 cup plain Greek yogurt (225g)
  • 1 tbsp fresh dill, finely chopped (10g)
  • 1 tbsp fresh mint, finely chopped (10g)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the warm water, yeast, and sugar. Stir until well combined and let it sit for 5 minutes or until it becomes frothy.
  2. Add the flour, olive oil, and salt into the yeast mixture. Mix until a soft dough forms. Knead the dough on a floured surface for about 10 minutes or until smooth and elastic.
  3. Divide the dough into 16 equal portions and shape each portion into small balls. Flatten them slightly and coat with sesame seeds on one side.
  4. Place the coated side up on a lined baking sheet, cover with a damp cloth, and let it rise for about 30 minutes or until doubled in size.
  5. Preheat the oven to 375°F (190°C). Bake the simit bites for 20 22 minutes or until golden brown. Remove from the oven and let them cool on a wire rack.
  6. For the herbed Labneh dip, mix together the yogurt, dill, mint, salt, and pepper in a small bowl. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve the simit bites with the herbed Labneh dip on the side.
