Ingredients
- 1 pie crust
- 2 cups fresh spinach, chopped
- 4 large eggs
- 1 cup whole milk
- 1 cup shredded Swiss cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cups mushrooms, sliced
- 6 croissants
- 3 cups mixed berries (strawberries, blueberries, raspberries)
Instructions
- Preheat the oven to 375°F (190°C). Roll out pie crust and line a pie dish, set aside. Sauté onions and mushrooms in olive oil until tender, then mix with spinach. In a bowl, whisk together eggs and milk. Season with salt and pepper. Arrange the sautéed vegetables in the crust and pour the egg mixture over it. Top with Swiss cheese. Bake for 45 50 minutes or until set and golden brown. Let cool slightly before serving. Assemble croissants and fruit salad, garnishing quiche slices as desired.
