Ingredients
- 2 cups heavy cream
- 1/3 cup granulated sugar
- 1 tsp pure vanilla extract
- 2 cups mixed fresh berries (strawberries, raspberries, blueberries)
- 1/4 cup honey
- 1 cup mixed nuts (almonds, walnuts, pecans)
- Fresh mint leaves for garnish
Instructions
- In a large bowl, whisk together the heavy cream, sugar, and vanilla extract until stiff peaks form. Set aside.
- In another bowl, gently toss the mixed berries with 2 tbsp of honey to coat them evenly.
- Preheat oven to 350°F (175°C). Spread nuts onto a baking sheet and toast for 8 10 minutes, or until golden brown. Set aside to cool, then roughly chop.
- Assemble parfaits in individual glasses by layering the whipped cream, berry mixture, and honey roasted nuts in alternating layers. Repeat until each glass is full.
- Top with a fresh mint leaf for a touch of elegance. Prep: 15 min Cook: 10 min Total: 25 min
