Instructions

  1. Preheat your oven to 350°F and line an 8 inch square baking pan with parchment paper.
  2. In a large bowl, whisk together almond flour, coconut flour, erythritol, gelatin powder, baking soda, and salt.
  3. In another bowl, combine egg yolks, almond milk, matcha green tea powder, and vanilla extract (if using). Mix well.
  4. Gradually add the wet ingredients to the dry ingredients and mix until smooth.
  5. In a separate clean bowl, beat egg whites until stiff peaks form. Gently fold them into the batter.
