Ingredients

  • 1. 2 cups almond flour 2. 1/2 cup coconut oil 3. 4 tbsp raw honey 4. 1 tsp vanilla extract 5. 1/2 tsp sea salt 6. 1/4 tsp cinnamon 7. 1/4 cup unsweetened shredded coconut 8. 2 cups dark chocolate

Instructions

  1. In a large bowl, combine almond flour, melted coconut oil, honey, vanilla extract, sea salt, and cinnamon. Mix until well combined.
  2. Press two thirds of the mixture into the bottom of an 8x8 inch baking pan lined with parchment paper.
  3. Sprinkle shredded coconut evenly over the base layer.
  4. Melt dark chocolate and pour it over the coconut layer, smoothing the surface.
  5. Sprinkle the remaining almond flour mixture on top of the chocolate layer.
  6. Freeze for at least 4 hours or until set.
  7. Slice into bars and serve cold.

For a more intense coconut flavor, toast the shredded coconut before using it.
