Rub the chicken thighs with the spice mixture and let them sit while you prepare the vegetables. b. Toss cubed sweet potatoes in olive oil, parsley, and rosemary. Spread on a baking sheet and roast in the oven at 400°F (200°C) for 25 30 minutes or until tender and golden brown. c. In a large pot of boiling water, cook green beans for 3 4 minutes. Drain and immediately plunge them into ice water to stop the cooking process. Drain again and toss with minced garlic and avocado oil. Season with salt and pepper to taste. d. Grill the chicken thighs for 6 8 minutes per side or until cooked through. Let them rest for a few minutes before serving.
