  • 1 cup cassava flour
  • 1/2 cup yam flour
  • Water, as needed
  • Salt, to taste
  • 4 ripe plantains
  • 2 tablespoons oil
  • 4 large eggs

  • 1 cup fresh spinach, chopped
  • 1/2 cup tomatoes, diced
  • 1/2 cup onions, finely chopped
  • 1/2 cup bell peppers, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the cassava flour, yam flour, and a pinch of salt. Gradually add water until a soft dough forms. Knead for a few minutes until smooth and elastic. Set aside.
  2. Preheat an oven to 400°F (200°C). Slice the plantains lengthwise and brush with oil. Place them on a baking sheet and bake for 15 20 minutes, or until golden brown and tender. Remove from the oven and let cool slightly.
  3. Bring a pot of water to a simmer, add vinegar, and then crack eggs into the water one at a time. Poach the eggs for 3 4 minutes or until desired firmness is reached. Remove with a slotted spoon and set aside.
  4. In a saucepan, heat oil over medium heat. Sauté onions, garlic, bell peppers, tomatoes, and spinach until softened. Stir in smoked paprika, salt, and pepper. Cook for 2 3 minutes more, then remove from heat.
  5. Divide the dough into 4 portions. Roll each portion between your hands to create a ball, then flatten slightly. Boil water in a large pot and cook the fufu balls for 10 15 minutes or until they float to the surface. Remove with a slotted spoon and drain on paper towels.
  6. Arrange the grilled plantains and poached eggs on a serving platter, drizzle with the sauce, and place the fufu balls around them. Garnish with fresh herbs if desired.
