Ingredients

  • 2 cups Cassava flour 1 cup Yam flour 4 cups Water 1 tbsp Salt 1/4 cup Palm oil 2 cups Diced ripe Plantains 1 large Onion, chopped 2 cloves Garlic, minced 1 cup Fresh tomatoes, diced 2 cups Chicken or vegetable broth 1 can Red kidney beans, rinsed and drained 1/4 cup Cilantro, chopped 1 tsp Smoked paprika 1 tsp Ground ginger 1/2 tsp Ground nutmeg 1/2 tsp Ground cinnamon

Instructions

  1. In a large bowl, combine the cassava and yam flour with water and salt to form a thick dough. Knead until smooth. Boil water in a pot and cook the dough for about 5 minutes. Remove from heat and let it cool. Next, heat palm oil in a pan over medium heat and sauté diced plantains until golden brown. Add onion, garlic, tomatoes, spices, and broth to the pan and bring to a simmer. Cook for 10 12 minutes, stirring occasionally. Finally, fold in red kidney beans and cilantro. Serve the Palaver stew alongside the Fufu balls.
