Instructions

  1. a. In a small bowl, combine the ingredients for the spice mix. Set aside. b. Cut the chicken into 1 inch cubes and thread onto skewers, leaving space between each piece. c. Evenly coat the chicken with the spice mix and let it marinate for at least 30 minutes in the refrigerator. d. In a large bowl, toss together pineapple chunks, red onion, fresh cilantro leaves, and roasted peanuts. e. Heat olive oil in a pan over medium heat. Add the chicken skewers and cook for 4 5 minutes per side or until cooked through. Season with salt and pepper to taste. f. Assemble the dish by placing the grilled chicken skewers on a platter, alongside the pineapple slaw.
