Instructions

  3. Add the diced bell peppers and tomato, cook for another 5 minutes until they soften slightly.
  4. Stir in the tomato paste, chicken or vegetable broth, and canned crushed tomatoes. Bring to a boil.
  5. Add the rice and stir well to coat it with the sauce. Reduce heat to low, cover, and let it simmer for about 18 20 minutes, or until the rice is cooked through and has absorbed all the liquid.
  6. Gently fold in the cooked chicken or chickpeas and chopped cilantro or parsley. Taste and adjust seasoning if necessary.
