Instructions

  1. a. Grease an oven safe baking dish with butter or coconut oil. Preheat the oven to 350°F (180°C). b. Cook the rice according to package instructions, then set aside. c. In a large saucepan, combine milk, cooked rice, sugar, cinnamon, and salt. Stir well to mix all ingredients. d. Bring the mixture to a simmer over medium heat, stirring occasionally. Once it begins to bubble, reduce the heat to low, cover, and let it cook for 20 30 minutes or until the rice absorbs most of the liquid and has a creamy texture. e. Remove from heat and mix in diced mango and toasted shredded coconut. Stir gently to distribute ingredients evenly. f. Pour the mixture into the prepared baking dish, smoothing out the surface with a spatula. g. Bake for 30 40 minutes or until the top is golden brown. h. Allow the dessert to cool slightly before serving. Garnish with fresh mint leaves and additional fruit if desired.
