1 lb large shrimp, peeled and deveined
2 lbs mussels, scrubbed and debearded
4 cups cauliflower rice
1 cup white wine
1/4 cup chopped parsley
3 cloves garlic, minced
1 lemon, juiced
1 tbsp olive oil
Salt and pepper, to taste
Instructions
In a large pot, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.
