  • 1 can (15 oz) chickpeas, drained and rinsed 1/2 cup unsweetened shredded coconut 1/4 cup lime juice, freshly squeezed 2 tablespoons gluten

  4. Scoop 1 tablespoon of the mixture and shape into a ball. Repeat for all the chickpea mixture.
  5. Refrigerate for at least 30 minutes to firm up.
