Instructions

  1. Prepare the marinade by whisking together the peanut butter, coconut milk, soy sauce, honey, lime juice, cumin, coriander, paprika, salt, and pepper in a small bowl. Set aside.
  2. Thread the chicken cubes onto wooden or metal skewers, ensuring each piece is evenly coated with the marinade. Cover and refrigerate for at least 30 minutes to marinate.
  3. Preheat an outdoor grill or broiler to medium high heat. Grill or broil the chicken satays for 4 5 minutes per side, or until cooked through and no longer pink in the center. Remove from heat and let rest for a few minutes before serving.
