  • 4 large tomatoes, chopped
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon red chili powder
  • 1/2 teaspoon cumin seeds, roasted and ground
  • 1/2 teaspoon coriander powder
  • 1/4 cup fresh cilantro leaves, chopped
  • 2 tablespoons lemon juice For Mango Lassi:
  • 1 ripe mango, peeled and pitted
  • 1 cup plain yogurt
  • 1/2 cup cold water
  • 3 tablespoons sugar or honey
  • 1/2 teaspoon cardamom powder
  • Ice cubes, as needed

Instructions

  1. In a large pot, heat ghee or oil over medium heat. Add onions, garlic, and ginger, sautéing until translucent.
  2. Add cumin seeds, coriander powder, paprika, turmeric, and salt, stirring to coat the onion mixture.
  3. Stir in tomato paste and cook for 1 2 minutes.
  4. Add basmati rice and water or vegetable broth. Bring to a boil, then reduce heat and simmer, covered, for 10 12 minutes or until rice is cooked and tender.
  5. In a separate pan, cook mixed vegetables until tender crisp. Stir into the cooked rice along with optional chicken or paneer.
  6. For Spiced Tomato Chutney, blend all ingredients in a food processor until smooth. Serve alongside the biryani.
  7. To prepare Mango Lassi, blend together mango, yogurt, water, sugar or honey, cardamom powder, and ice cubes until smooth and frothy. Serve chilled.
