  • 1 cup almond flour 1/2 cup granulated sugar 1/4 cup unsalted butter, softened 1 large egg Zest of 1 orange 1 teaspoon baking powder 1/4 teaspoon salt 1/2 cup ground almonds 1/3 cup orange marmalade 1/4 cup toasted almond flakes (optional)

Instructions

  1. a. Preheat the oven to 350°F (175°C). Grease and line an 8 inch baking pan with parchment paper. b. In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the egg and orange zest, and mix well. c. In another bowl, whisk together the almond flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. d. Spread the batter evenly in the prepared pan and bake for 25 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan. e. Once cooled, cut the cake into 16 squares. In a small bowl, mix together the orange marmalade with ground almonds to create a thick filling. f. Spread a spoonful of the orange marmalade mixture on top of half of the cake squares and place another square on top, pressing down gently. Repeat for all the squares. g. In a shallow dish, spread out the almond flakes (if using). Roll each sandwiched cake in the almond flakes to coat completely.
