Instructions
a. Marinate the chicken in olive oil, gluten free soy sauce or tamari, lemon juice, garlic, paprika, cumin, salt, and pepper for at least 30 minutes. b. Prepare the eggplant salad by slicing the eggplants, grilling them until tender, and then tossing with cherry tomatoes, red onion, cucumber, olive oil, red wine vinegar, sugar, and chopped parsley. c. Cook the rice pilaf according to package instructions or using gluten free rice and vegetable oil. d. Grill the marinated chicken until cooked through. Slice into kebab pieces for serving. e. Assemble the meal by placing a scoop of rice pilaf on each plate, followed by the Spiced Chicken Kebabs, and Eggplant Salad.
