  2. In a medium saucepan, bring water and shrimp or seafood stock to a boil. Gradually add grits while stirring continuously to avoid lumps. Reduce heat to low, cover, and simmer for 5 minutes.
  3. Add heavy cream, salt, and black pepper to the grits, then continue cooking for another 10 15 minutes or until the grits are creamy and thickened. Stir frequently to prevent sticking. Taste and adjust seasoning as needed. Set aside.
  4. In a large skillet, melt butter over medium heat. Add onion and garlic, and sauté for 2 3 minutes until softened.
