  • free crepes 2. 3 large eggs, hardboiled 3. 12 oz fresh green beans, trimmed 4. 6 oz cherry tomatoes, halved 5. 1 cup baby spinach leaves, washed 6. 1 can (6 oz) of tuna in water, drained 7. 1/2 cup Kalamata olives, pitted 8. 3 tbsp capers 9. 1/4 cup gluten

Instructions

  1. Blanch the green beans in boiling water for 4 minutes drain and refresh under cold running water.
  2. Slice hardboiled eggs into wedges.
  3. Assemble crepes by spreading a thin layer of mayonnaise mixed with Dijon mustard and lemon juice on each, then adding spinach leaves, green beans, cherry tomatoes, tuna, olives, capers, and sliced egg.
