Ingredients
1 cup raw cauliflower rice (freshly grated or packaged) 2 large eggs 4 oz smoked salmon, thinly sliced 1/4 cup fresh dill, chopped 1/2 cup almond flour 2 tbsp coconut flour 1/2 tsp baking soda 1/2 tsp sea salt 1/4 cup unsweetened almond milk 2 tbsp olive oil or avocado oil, divided Freshly ground black pepper, to taste For Herbed Egg Mousse: + 6 large eggs + 1/4 cup fresh parsley, chopped + 2 tbsp fresh chives, chopped + 1/2 tsp sea salt + Freshly ground black pepper, to taste
Instructions
Prepare the cauliflower rice by grating a whole head of raw cauliflower or using pre packaged cauliflower rice. Set aside.
In a large mixing bowl, combine almond flour, coconut flour, baking soda, salt, and freshly ground black pepper. Stir well to combine.
Add the cauliflower rice into the dry ingredients and mix until fully incorporated.
In a separate bowl, whisk together eggs and almond milk. Pour this mixture into the dry ingredients and stir until well combined. Let the batter rest for 5 minutes.
Preheat a non stick skillet over medium heat. Add half of the olive oil to the skillet and use a spoon or small scoop to drop spoonfuls of the cauliflower rice batter onto the hot skillet. Cook until golden brown on both sides, approximately 2 3 minutes per side. Remove from skillet and set aside.
For the herbed egg mousse, whisk together eggs, parsley, chives, salt, and freshly ground black pepper in a medium bowl. Heat the remaining olive oil in a non stick saucepan over low heat. Slowly pour in the egg mixture while constantly stirring to avoid curdling. Cook gently until soft and fluffy, approximately 5 7 minutes. Remove from heat and set aside.
To assemble the dish, place two cauliflower rice blinis on a plate. Layer slices of smoked salmon over the blinis and spoon a generous dollop of herbed egg mousse on top. Garnish with fresh dill sprigs and serve immediately.
