  • 1 1/2 cups (300g) almond flour 1 cup (240ml) olive oil, divided 3/4 cup (90g) coconut flour 1/2 teaspoon baking soda 1/2 teaspoon sea salt 1 teaspoon vanilla extract Zest of one orange 1/4 cup (60ml) freshly squeezed orange juice 1/2 cup (125g) honey, divided 1 cup (150g) mixed dried fruits 1 cup (120g) walnuts, roughly chopped

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. In a large bowl, whisk together almond flour, coconut flour, baking soda, and salt. Add the orange zest and vanilla extract. Slowly drizzle in 3/4 cup of olive oil while stirring until a dough forms. Fold in the dried fruits. Shape the dough into 1 inch (2cm) balls and place them onto the prepared baking sheet, spaced about 2 inches apart. Flatten each ball slightly with the palm of your hand. Bake for 10 12 minutes or until lightly golden brown. Allow to cool completely on a wire rack. In a small saucepan, combine remaining olive oil, honey, and walnuts over medium heat. Cook, stirring frequently, until the walnuts are toasted and honey has thickened. Drizzle the warm praline mixture over the cooled cookies.
