Ingredients
- 2 slices gluten
- free sourdough bread
- 1 ripe avocado, halved, pitted, and peeled
- 4 oz crumbled feta cheese
- 2 large tomatoes, thinly sliced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh parsley leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper, to taste
- 1/2 teaspoon dried oregano
Instructions
- Toast the gluten free sourdough slices in a toaster or oven until golden brown. Set aside.
- In a small bowl, mix together crumbled feta cheese, chopped basil, and parsley. Set aside.
- In another small bowl, whisk together olive oil, red wine vinegar, salt, pepper, and dried oregano to create the tomato dressing.
- Spread half of the mashed avocado on each toasted sourdough slice.
- Layer sliced tomatoes over the avocado.
- Top with the feta cheese and herb mixture.
- Drizzle the tomato dressing over the assembled toast.
