Ingredients
6 large eggs
1/2 cup gluten
free bread, cubed
1 cup cherry tomatoes, halved
2 cups fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
1/2 tsp dried oregano
1/4 tsp ground black pepper
1 tbsp olive oil

Instructions
Preheat the oven to 350°F (175°C). Lightly grease a 9 inch pie dish or baking tray.
In a large bowl, whisk together eggs, salt, oregano, and black pepper.
Add gluten free bread cubes, cherry tomatoes, spinach, feta cheese, and Parmesan cheese to the egg mixture. Toss gently to combine all ingredients.
Pour the mixture into the prepared dish, distributing evenly. Drizzle with olive oil and bake for 35 40 minutes or until golden brown and set in the center.
Remove from the oven and let it rest for a few minutes before slicing and serving.
