Ingredients
- 1. 20 ripe fresh figs 2. 2 cups gin 3. 1 cup clover honey 4. Juice from 4 lemons 5. Fresh mint leaves 6. Crushed ice
Instructions
- In a saucepan, gently heat the honey and gin together until well combined. Remove from heat and allow to cool.
- Carefully slice 18 figs in half and set aside. Reserve remaining figs for garnish.
- In a large cocktail shaker, muddle 10 halved figs with lemon juice.
- Add infused honey gin mixture into the shaker and shake vigorously for 20 seconds.
- Strain mixture into a cocktail glass filled with crushed ice, discarding used figs.
- Top with a splash of club soda and garnish with reserved fig halves and fresh mint leaves.
