  • 30 g quick oats 100 g milk 25 g sugar 6 g yeast Zest of 1 lemon 20 ml olive oil 50 g honey 400 g vegetable oil, for frying Pinch of salt Warm spiced wine syrup: 200 ml red wine 100 g sugar 1 cinnamon stick 5 cloves Zest and juice of 1 lemon

Instructions

  1. In a mixing bowl, combine the oats, milk, sugar, yeast, lemon zest, olive oil, and a pinch of salt. Mix until well combined and let it sit for about 30 minutes, or until bubbles appear on the surface.
  2. Heat the vegetable oil in a deep frying pan over medium heat to around 180°C (350°F).
  3. Once the batter has risen, carefully drop teaspoonfuls of the mixture into the hot oil and fry until golden brown on all sides. Remove from the oil and set aside on a paper towel to drain any excess oil.
  4. For the spiced wine syrup, in a saucepan over medium heat, combine the red wine, sugar, cinnamon stick, cloves, lemon zest, and juice. Bring it to a simmer and cook for about 10 minutes, or until it has thickened slightly.
