Ingredients
- 1 cup fresh spinach (packed)
- 1/2 cup cherry tomatoes
- 1/4 cup cucumber, peeled and sliced
- 1/2 cup plain Greek yogurt
- 1 tbsp fresh lemon juice
- 1 tbsp extra virgin olive oil
- 1/2 avocado, pitted and flesh scooped out
- 1 cup ice cubes
- Salt and pepper to taste
Instructions
- Combine the spinach, cherry tomatoes, cucumber, Greek yogurt, lemon juice, extra virgin olive oil, and half of the avocado in a blender.
- Blend until smooth, adding salt and pepper to taste.
- Pour into a glass, top with remaining avocado slices and serve immediately.
