4 large bell peppers (assorted colors)
8 oz crumbled feta cheese
1/2 cup chopped fresh parsley
1/2 cup chopped fresh dill
1 lemon, zested and juiced
3 cloves garlic, minced
Salt and pepper to taste
Olive oil for drizzling
Optional: cherry tomatoes, olives, and cucumber for garnish
Instructions
Preheat oven to 375°F (190°C).
Cut the tops off the bell peppers and remove seeds and membranes.
In a mixing bowl, combine feta cheese, parsley, dill, lemon zest, garlic, salt, and pepper. Mix well.
Stuff each pepper with the feta mixture and place them on a baking sheet.
Drizzle the peppers lightly with olive oil and bake for 20 25 minutes, or until the peppers are tender.
In the meantime, prepare the lemon herb sauce by whisking together lemon juice, 1/4 cup chopped parsley, 1/4 cup chopped dill, and salt and pepper to taste.
Remove the stuffed peppers from the oven and let them cool slightly. Drizzle with the lemon herb sauce and serve immediately. Optional: garnish with cherry tomatoes, olives, and cucumber for added color and texture.
