Ingredients

  • 4 slices sourdough bread
  • 8 slices Colby
  • Jack cheese
  • 3 tbsp unsalted butter, softened
  • 1/2 cup jalapeño jam (store
  • bought or homemade)

Instructions

  1. Preheat a large cast iron skillet over medium heat.
  2. Spread one side of each slice of bread with softened butter.
  3. Place two slices of bread, buttered side down, into the skillet.
  4. Top each with four slices of Colby Jack cheese and a generous layer of jalapeño jam.
  5. Add the remaining two slices of bread, buttered side up, on top of the jalapeño jam.
  6. Cook for 2 3 minutes per side or until golden brown and cheese is melted.
  7. Remove from skillet, let rest for 1 minute, then slice into quarters.
