Ingredients

  • 2 ears corn on the cob, husked
  • 1/4 cup mayonnaise
  • 1 chipotle chili in adobo sauce, finely chopped
  • Zest and juice of 1 lime
  • 1/4 cup crumbled Cotija cheese
  • 1 tablespoon fresh cilantro, chopped
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat a grill or grill pan to medium high heat.
  2. In a small bowl, mix together the mayonnaise, chipotle chili, and lime zest and juice to create the Chipotle Lime Mayo. Set aside.
  3. Brush each ear of corn with butter, then place on the grill or grill pan. Cook for 8 10 minutes, turning every few minutes until the corn is slightly charred and tender, approximately 20 minutes total cooking time.
  4. Remove corn from heat and let it rest for a minute. Spread a generous amount of Chipotle Lime Mayo on each ear of corn. Sprinkle with Cotija cheese and garnish with fresh cilantro.

Feel free to adjust the spiciness of the Chipotle Lime Mayo by adding more or less chipotle chili as desired.
