  • 1/2 cup cashews, soaked and drained
  • 1/2 cup coconut oil, melted
  • 1/4 cup lemon juice

Instructions

Blend the soaked cashews, melted coconut oil, lemon juice, and 3 tablespoons of passion fruit pulp in a high speed blender until smooth and creamy. c. Prepare parfait glasses by dividing half of the coconut milk mixture among them. Top with layers of diced tropical fruits, then the cashew cream, followed by more fruits and remaining coconut milk mixture. d. Finish each parfait with a dollop of passion fruit pulp and an edible orchid flower for garnish.
