Ingredients
- 2 cups fresh pineapple, diced 1 cup ripe mango, diced 1 cup kiwi, peeled and sliced 1/4 cup shredded coconut, toasted 1/2 cup coconut cream 2 tablespoons honey 1 teaspoon vanilla extract
Instructions
- In a large mixing bowl, combine the pineapple, mango, and kiwi. Gently toss until well combined.
- In a separate small bowl, whisk together the coconut cream, honey, and vanilla extract.
- Drizzle the coconut cream mixture over the fruit salad and toss gently to coat evenly.
- Sprinkle the toasted shredded coconut on top of the fruit salad.
- Serve immediately in two elegant dessert bowls or martini glasses, garnished with additional fruit slices if desired.
