Instructions
a. In a bowl, combine pineapple, coconut cream, honey, and vanilla extract. Stir until well mixed. b. Gently fold in the roughly chopped macadamia nuts. c. In two serving glasses, layer crushed gluten free graham crackers, followed by the tropical fruit mixture. Repeat layers until glasses are filled to the brim. d. Top with a dollop of whipped cream, if desired.

For a stronger tropical flavor, use pineapple juice instead of water when crushing the graham crackers.
